Easy Garlic Noodles
This is a super easy meal when you have about 15 minutes and you want something satisfying. With some vegetables making a sneaky appearance, you can feel good about this meal, but it’s also totally comfort food.
I make this at least once a week, when I have no energy and need food FAST!
Ingredients
Rice vermicelli noodles or ramen noodles - enough for 2 servings
1 medium sized zucchini grated
1 tbsp butter
2 cloves of garlic, diced or grated
1 tbsp soy sauce or gluten free tamari sauce
1/4 -2/3 cup full fat coconut milk (the kind from a can)
kimchi, green onions, and cilantro for serving (if desired)
Method
Place a medium pot on the stove filled with water and set to high heat. This will boil your noodles. While the water is heating up, prep the sauce.
For the sauce, place a pan over medium heat and add the butter and garlic. Saute for just a few minutes and then add the zucchini, soy sauce and coconut milk. The zucchini will let off some water, so cook everything together until some of the water has cooked off and you have a nice, loose sauce.
Cook the noodles according to the packet instructions for whatever noodles you’re using. Ensure you add salt to your boiling water before you cook the noodles. Once the noodles are cooked, add them to the sauce, toss to coat, and then straight into your bowl! Garnish with kimchi, green onions and cilantro if desired. It’s that easy! Enjoy.
